Easy Recipe for a Luxury Valentine’s Day Dinner from Home
Cooking Valentine’s Day dinner for your partner is a lovely gesture, so get the kids fed and off to bed early so that you can spend some quality time together. Making your own Valentine’s Day dinner from scratch doesn’t have to be complicated… You can’t go wrong with curry, so here is an easy (and healthy) Burmese coconut kaukswe chicken curry recipe from @fopperholic that you and your partner can enjoy this Valentine’s Day:
- Season 400g of chopped chicken breast or thighs.
- Add 2 chopped onions, 5 chopped garlic cloves, 1cm of finely grated ginger to a blender or food processor and blend until smooth, add a little water if necessary.
- Add oil to a pan and add the onion mixture and cook on a high heat, stirring, for about 5 mins. Turn the temperature down to a medium heat and add the chicken and cook, turning occasionally, until it browns.
- Add 100ml of light coconut milk, 500ml of chicken stock, 2 tbsp medium curry powder, 400g of mixed vegetables - I love this recipe because you can add whatever vegetables you find in the fridge and it will still taste delicious. Bring to the boil, reduce the heat, simmer for 20 mins stirring occasionally.
- Meanwhile cook 200g of dried thin noodles. Serve with coriander, red onion, boiled eggs, chilli and lime wedges.
For an extra sprinkle of romance, decorate the table with rose petals and crack open a bottle of champagne.
